Ingredients:

  • 1 cup Ragi Idli Mix

  • 1 cup water (adjust as needed)

  • Salt to taste

  • ½ cup curd (optional, for extra softness)

  • Oil for greasing idli moulds

Method:

  1. Mix the batter – In a bowl, combine Ragi Idli Mix, water, and salt. Mix well until smooth.

  2. Ferment – Cover and leave in a warm place for 6–8 hours or overnight (if the mix contains urad dal). If using instant mix, skip fermentation.

  3. Prepare the steamer – Grease idli moulds with a little oil.

  4. Pour the batter – Fill the moulds about ¾ full.

  5. Steam – Place in steamer and steam for 10–12 minutes or until a toothpick comes out clean.

  6. Serve – Remove idlis from moulds and serve hot with coconut chutney and sambar.
